Vanilla Extract

Makes one cup

Note: Vanilla will start to deepen in color over time. It’s ready to use after 6-8 weeks. The longer it sits, the more intense the flavor. You can replenish with more bourbon  for up to several months before the beans begin to break down. At that point, just strain it as needed, but don’t replenish the jar.

Special equipment: small glass jar with lid (I suggest dividing this recipe among 2-3 small jars)

6-8 vanilla beans

1 cup Bourbon (Thanks, Second Sight Spirits!)


Using scissors or a sharp knife, cut vanilla beans in half lengthwise. Place in a small glass bottle with a screw cap. Pour bourbona over beans. Store in a dark cupboard, shaking occasionally.
